Dear Log Cabin friends:

It’s the month of “hearts”- February. I am always happy to see February arrive even though it is still winter and sometimes bitter cold outside. I feel that with this month, taking it day by day, we’ll soon be into the month of March when we can seriously think spring might come after all. This has been a winter we won’t soon forget and spring still seems so far away.

WINTER IS IN MY HEAD, BUT SPRING IS IN MY HEART – Victor Hugo

The narcissus (paperwhites) are blooming their hearts out on my kitchen windowsill – they give me a sampling of spring, nevertheless. February is a shorter month than others, but only by a couple of days, & it gives me time to finish up the January projects I started (my list was quite long). It feels good to check off the list as I go along accomplishing odds and ends of jobs that have accumulated since last winter.

February is my birth month. I treasure each and every year although I wonder how they roll around so quickly anymore. I always send my mom flowers on MY birthday, with a note of thanks for giving me this day (my life). It’s just a wonderful simple pleasure for me to give and her to receive those flowers each year in February. Perhaps I was born in the month of February for a reason – it’s such a long winter, and when I think I can’t take much more of it, I get to celebrate my birthday and my mom receives spring flowers of purple, yellow and pinks. As the years come and go, I don’t celebrate much, just finding joy and peace within and spending quiet time with family/& or friends is all I need. I am blessed indeed.

NO LONGER FORWARD NOR BEHIND, I LOOK IN HOPE AND FEAR;
BUT GRATEFUL TO TAKE THE GOOD I FIND, THE BEST OF NOW AND HERE –John G.Whittier

I love a full moon and the next one is February 28th. It is called the Full Snow Moon because February snowfall was usually the heaviest, in times past. The Native American tribes referred to the February moon as a Full Hunger Moon, since harsh weather conditions made hunting difficult. The monthly moons sometimes go by different names. I recently purchased a new book for my grandsons called “When the Moon is Full”- I’ll love reading it to them as we watch the full moons.

Wintertime is soup time at my home and according to dh (dear hubby) he wishes winter was overJ. But alas, I love my soups – a simple country pleasure. I make several different kinds of soups during the winter months as I find nothing as satisfying and comforting on a cold winter night as soup. This week I made a loaf of dill/onion bread to go with our soup. I think it’s not that dh is tired of soup, it’s just that the winter has been so long J. I do skip awhile between soups so it’s not like we have soup ALL the time. DH is a meat & potatoes kind of guy, and I’m not fond of meat – give me a simple bowl of soup and I’m a happy soul.

DILL/ONION BREAD
(This is a no-knead bread, makes one loaf. I bake in a greased 1 ½ qt. square casserole dish)

1 pkg. yeast 1 c. creamed cottage cheese
1 Tblsp. butter, softened ½ tsp. salt
¼ c. warm water 1 egg, beaten
1 ½ tsp. dill seed 2 -2 ½ c. flour
2 Tblsp. sugar 1 Tblsp. minced onion (can use dried)
1 tsp. dill weed ¼ tsp. baking soda

Dissolve yeast in warm water. Add sugar. Heat cottage cheese to lukewarm. Add to yeast mix & add beaten egg, onion, herbs, soft butter, salt & soda. Add flour and stir into soft dough. Cover & let rise until almost double in size.
Punch dough down & turn into a well greased casserole dish. Let rise 40 minutes. Preheat oven at 350 degrees & bake for 40-45 minutes. Brush with butter & sprinkle with salt as soon as removed from oven. Serve a slice with a bowl of soup.

Some of you may be reading this letter on the website if you didn’t receive by email. I lost my group lists when computer went down over Christmas, so if you want to subscribe, just email me & put “subscribe” in the subject line. I may start a weekly blog later in the year for those interested in following along. It will be very simple with pictures, recipes and such. Starting a blog is a bit scary for me as I’m not fond of computers anyway but I’ve been mulling this over in my brain for the last two years so Jan. lst when I listed my yearly goals, I wrote down “blog for Log Cabin.” I’ll notify you if & when this happens J
