Dear Log Cabin friends:
April showers bring May flowers. April is
finally here & the rain showers have begun, the earth is awakening from
its slumber, & I look for the color green everyday. The little crocuses
are blooming brightly adding color to the drabness of the first days of
April. Tulips are growing at various heights on the south side they
are tall, & on the exposed north side they are barely peeking through.
The birds are singing earlier in the morning & louder too, perhaps to
attract their mate, or maybe to tell me listen more. Stepping
outside at night, these first days of April, it is a joy when I hear the
peepers down by the pond & creek singing in the peepers
choir. The silent nights of winter are gone & the earth is alive
with the sounds of spring what joy it brings to my simple country
heart! It has been a long winter indeed.
This month Im planning out my herb garden the revamping, adding more, & the forever changing that happens in the life of a gardener truly a simple country pleasure. Ive been clipping the chives & adding them to our meals already, & Ill be picking the young dandelion greens this weekend to add to our salad so full of good nutrients. We do not spray our meadow & soon the dandelions will be turning it into a blanket of sunshine yellow. Many people will think weeds when they see it, but I think of it as Mother Earths gift to my table. This is a spring tonic wild herb to eat after our long winter free for the picking. If you want some young dandy greens to add to your salad, feel free to stop in the lane next visit out to The Log Cabin & walk the meadow & help yourself there will be plenty to share J .
And by the end of the April the wild plum blossoms will be in full bloom. This is one of the neatest sights in our prairie ditches & fence rows & one cant help but stop, clip a few branches, & bring home to a vase for the table. The scent & sight of this simple country bouquet will put your senses on overload truly an unforgettable country pleasure.

PLANET EARTH BREAD
| 3 eggs, beaten | ½ tsp. nutmeg |
| 1 c. oil | 1 tsp. soda |
| 2 tsp. vanilla | 1 lg. carrot, grated |
| 2 c. sugar | 1 med. zucchini grated or see note below |
| 3 c. flour | ½ c. chopped pecans |
| ½ tsp. salt | Optional: ½ c. mini choc. chips |
| 1 tsp. cinnamon | |
| ½ tsp. allspice |
Beat eggs, add oil, vanilla & sugar & mix well. Add dry ingredients, then the carrot, zucchini, and pecans. Put in 2 9x5 loaf pans & bake 1 hr. 15 min, or until toothpick comes clean. Cool 10 min.
Let sit in refrigerator overnight or freeze, it will cut more easily then
& is delicious.
NOTE: I chopped (in food processor) zucchini & freeze in 1 c. packages
in the summer to use during the winter. To use in this recipe I thawed zucchini
somewhat & then drained a bit. Choc. Chips are a nice addition especially
for interesting children in eating this.

EARTH DAY APRIL 22 GO GREEN!
Did you know this is the 36th year anniversary of Earth Day &
every year it seems more important than ever that we think seriously about
this day & Mother Earth. It is a day designated to remind us to celebrate
the nourishment, beauty & simplicity the earth offers every day &
the importance of keeping the earth & our bodies healthy. I buy organic
& local as much as we can. Its good for the body, good for the
earth.
Have you gone green yet - even just a couple of ways? Help save Mother
Earth.
We all know there are entirely too many plastic bags in the landfill already.
How about taking your own canvas bags to the stores for items you buy? Start
there!!
The Log Cabin is recycling paper bags, even with other stores advertising
on them. If you have extra paper bags, you may leave them off here &
we will use & re-use. Lets all start doing our part - for the
future of our grandchildren & great grandchildren. It is an important
time to be on this planet the universe is listening!
And think about gardening this spring in a bigger & better way.
Grow the veggies your family eats. Make the world a better place
grow something, even if it is a tomato in a pot.!

LOG CABIN INN
For those of you unfamiliar with THE INN- it is the little log cabin
that sits next to our log home. It was my shop previously before moving
the shop to the courtyard level behind our home. If you would like to view
Log Cabin Inn sometime, let me know, & it can be arranged. We have kept
surprisingly busy with this little endeavor & everyone has enjoyed the
peacefulness of our little cabin (its really not all that little).
Brochures will be out this month & for more information just call or
stop by the shop.

There are a lot of classes set up in April but this is a good time to
work on projects. We cant be out in the yard a lot yet, or planting
the garden, so take a class at The Log Cabin.
CLASS INFORMATION
RUG HOOKING 101
Want to learn rug hooking last class!! Class begins next
Tuesday evening, a 3 wk. series. A great time to learn! Call me or stop
by for more information ASAP.
WOOL APPLIQUE
Learn how to do this, an easy & primitive way. It only takes
one eveningApril 24, 6:30 pm. Call or stop by for more info.
WOOL APPLIQUE CLUB
Yes, theres some of us that enjoy it THAT MUCH! So we are starting
a club (of sorts) for it. Must be registered to come, &
have taken the Log Cabin beginners class. Well meet every OTHER month
for a project. ON April 16 well meet & the project is called SPRING
FLOWERS, 6:30 9 p.m.
LAST CHANCE TO LEARN TO OVER-DYE WOOL
This is it! The last class I will teach on over-dyeing woolens.
After many requests I will teach this class, one last time! If you have
ever thought about learning how now is the time! Call or stop by
for more info. This class will be May 14, 9 -12. Class size is limited-
we are going by first sign up basis. (Im sure it will be completely
full by mid-April). Remember, we make classes fun while you are learning!
JUST IN wonderful handmade soap, all natural ingredients! Ive looked for 5 years for THEE soap to carry in my shop, & I finally found it!! The 2nd scent arriving next week. The bestest!
HERB STUDY GROUP
My oh my! We do have fun & learn in the process! I gave the topic in
March on the 2008 Herb of the Year, Calendula. Calendula/orange cookies,
calendula mini quiches were tasted, calendula salve was made & used,
and wool over-dyed with calendula was looked at. This is a medicinal herb
& a pretty one at that. It is a member of the marigold family &
Ive never grown it before but I am planting some this year & will
use it. Sue G. brought delicious refreshments made with mint. Handouts &
recipes were wonderful.
Aprils topic will be on Spring Salad Herbs by Linda M.; Spring Tonic
wild Herbs by Karalyn N.; Herbs to Plant for Bees and Butterflies by Sue
H., and a few neat Herb pots will be shown. The group will meet on Tues.
evening, April 22, Earth Day, at 6:30 p.m. Register to attend as we have
limited space at this time.
